Meatball Glaze

We had meatballs the other night and looked up a glaze. This was delicious and super easy. We grilled the meatballs on skewers on the grill and just brushed this glaze on top. Served over rice. Pretty Tasty!

Ingredients

  • 1/3 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons finely chopped onion
  • 2 tablespoons apple juice
  • Dash cayenne pepper  
Directions
  • In a saucepan, combine the ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until onion is tender and sauce is slightly thickened. Remove from the heat.

Green Enchilada Sauce



Seth made this tonight, gourmet,  I know! It was delicious. It makes a ton so we froze the left overs for future use. 
Green Enchilada Sauce (Kate’s Knockoff Cafe Rio Recipe)
Recipe by Our Best Bites
2-3 Tbsp. extra-virgin olive oil
1 large onion, minced
5-6 cloves garlic, minced or pressed
2 green peppers, chopped
1-2 jalapenos, seeded and membranes removed if desired (and I desire. Always.)
1 1/2 lb. tomatillos, husked and quartered or halved
1/2 bunch cilantro, coarsely chopped
1 1/2 tsp. Kosher salt
1/4 tsp. black pepper
1 1/2 tsp. cumin
4 c. chicken broth
2-3 Tbsp. sugar (optional and to taste; the sauce Cafe Rio uses seems to be slightly sweet, so if I’m using this sauce for enchilada-style burritos, I generally add a little sugar, but for everything else, I leave it out.)
In a large saucepan or stock pot, heat olive oil over medium heat. Saute onions and garlic until tender and fragrant.
While onions are sauteeing, combine tomatillos, green peppers, jalapeno peppers, and cilantro in your blender. Process until smooth; you may have to do it in batches and/or add some chicken broth to make things blendable.
Pour the tomatillo mixture over the onions and garlic and add chicken broth, salt, pepper, and cumin. Simmer 15 minutes-1 hour, depending on the consistency you want. I usually turn the heat to high and boil it uncovered until I reach the consistency I want; it makes things go a lotfaster. The sauce can also be simmered in a slow cooker all day.
Serve over tacos, as an enchilada sauce, inside burritos, or as a dip for chips.

Caramel Apple Cheesecake Bars

The first time I made these, I pulled them out of the oven and dropped the pan on the floor. After an hour + in prep time, I cried. I just cried. Disclaimer: I'm pregnant. I knew it was good and I was dying to really try it, so I made it again about a week later. And, this time it made it safely from the oven to the cooling rack. And, it was delicious. Truly delicious. Also, you should know that I halved the recipe both times I made it and it was still a ton of dessert.

Caramel Apple Cheesecake Bars with Streusel Topping

INGREDIENTS:
Base:
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
¼ teaspoon salt
½ teaspoon cinnamon
1 cup (2 sticks) butter, softened

Cream Cheese Layer:
2 (8-ounce) packages cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract

Apples:
3 Granny Smith apples, peeled, cored and finely chopped
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Streusel Topping:
1 cup firmly packed light brown sugar
1 cup all-purpose flour
½ teaspoon cinnamon
1/2 cup quick cooking oats
1/2 cup (1 stick) butter, softened

Caramel Sauce:
4 tablespoons butter
1 cup firmly packed light brown sugar
½ cups half-and-half or cream
Pinch of salt
1 tablespoon vanilla

DIRECTIONS:
Preheat oven to 350 degrees F.

In a small bowl, stir together chopped apples, two tablespoons sugar, cinnamon, and nutmeg. Set aside.

In a medium bowl, combine all the streusel topping ingredients and mix until crumbly. Set aside.

In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender or two forks until mixture is crumbly but combined. Press evenly into a 9X13-inch baking pan lined with aluminum foil. Bake for 10 minutes or until lightly browned.

While the crust is baking, in a large bowl, beat cream cheese with 1/2 cup sugar until smooth. Then add eggs, one at a time and then the vanilla. Mix well. Pour over the warm crust.

Spoon the apple mixture evenly over the cheesecake layer. Sprinkle the streusel topping over the apples. Bake for 30 minutes until the filling is set.

Cool the bars to room temperature. Drizzle with the caramel topping (or plate individual slices and drizzle with topping one by one).

For the caramel sauce, mix butter, brown sugar, half-and-half or cream, and salt in a saucepan over medium-low heat. Bring the mixture to a simmer and cook while whisking gently for 5 to 7 minutes, until thickened slightly. Add the vanilla and cook another minute to thicken further. Turn off the heat and pour the sauce into a jar. Refrigerate until cold. If the caramel sauce has cooled in the fridge long enough to harden, warm slightly before drizzling on bars.

Eggnog Bundt Cake with Caramel Sauce

This has to be one of the richest desserts I've ever eaten. And, all you have to do is look at the ingredient list to see why. I browsed all my favorite recipe sites for days looking for the perfect Christmas Eve dessert and decided to go with this one and I'm so glad I did. Everyone loved it. Even I loved it which is saying a lot because 1) I detest the taste of eggnog and 2) I detest the taste of nutmeg. But, not only did it turn out beautifully, but the caramel sauce did the perfect job of subduing the strong nutmeg flavor of the cake. I know it's a little late for a Christmas cake, but this would also be fabulous for New Year's!

Eggnog Bundt Cake with Caramel Sauce

1 yellow cake mix (preferably with pudding in the mix)
3 T. flour
2 c. eggnog
¼ c. butter, softened
2 eggs, slightly beaten
¼ tsp. rum extract
1/8 tsp. nutmeg

Beat until smooth and creamy. Pour into greased bundt pan. Bake at 350 for 35-45 minutes. Dust lightly with powdered sugar for presentation (optional, I didn't do this).

Caramel sauce:
½ lb brown sugar (~1 1/8 c.)
½ lb butter (2 sticks)
½ lb powdered sugar (~2 cups)
½ T. cinnamon
½ qt. rich vanilla ice cream

Add all ingredients to a medium sauce pan and melt together over medium heat. Pour warm over individual servings immediately before serving.

Caramel Apple Bread Pudding

I didn't actually make this dessert, but we were invited to dinner this week at a friend's house and she made it and I have been dreaming about it ever since. It was SO incredibly delicious. She said it was pretty easy, so I'm taking her word for it, though she is an amazing cook. I helped her make the buttermilk syrup (Ok, I only stirred it while it turned in to caramel-y goodness:)) and I would say that you don't want to eat this without the syrup. It also didn't hurt that she served it with the smooth and creamy Haagen-dazs 5 ingredient vanilla ice cream. My tummy hurt afterwards (a good hurt, though).


Caramel Apple Bread Pudding
Recipe adapted by Our Best Bites from C&H Sugar

5-6 c. stale French bread cubes (about 1/2 of a standard loaf cut into 1" cubes)
3 c. apples, peeled and chopped into small pieces
4 eggs
3 egg yolks
1 1/2 c. milk
1 1/2 c. heavy cream
3/4 c. brown sugar
1/4 c. sugar
1/4 tsp. salt
1 tsp. vanilla extract
1 tsp. almond extract
2 tsp. pumpkin or apple pie seasoning
1 Tbsp. butter, chopped

*If possible, cut the bread into cubes and leave it out for several hours or overnight. If not, place the bread cubes on a baking sheet and bake for 10-15 minutes or until the bread cubes are dried out but not toasted.

Preheat oven to 350. Lightly grease or spray a 9x13" baking dish with shortening or non-stick cooking spray.

In a large bowl, toss together the bread cubes and the apple pieces. Transfer to the baking dish. In the same large bowl, whisk together the remaining ingredients except for the butter. When combined, continue to whisk while pouring over the bread/apple mixture (just to make sure the spices are evently distributed). Gently combine the bread and egg mixture, making sure each piece of bread is soaking in part of the egg and milk mixture. Allow to stand for at least 15 minutes (longer, if you can; you could even do this the night before, cover it tightly, and then bake it in the morning).

When the egg/milk mixture has mostly soaked into the bread, dab the butter over the bread and place the baking dish in the preheated oven and bake for 40-50 minutes or until the center is set but not dry or burned.

Remove from oven and allow to stand for 5 minutes. Cut into pieces and serve with warm Buttermilk Syrup (and vanilla ice cream if you really want to walk on the wild side.)

Cream Cheese Pound Cake with Strawberry Coulis

It's strawberry season! I first baked this little piece of work a couple months back for a friend's birthday. I just topped with a sugar glaze and it was divine. However, this last week, I was in Utah for a Demarle party I was giving, and I decided to go all the way and make the strawberry coulis (don't worry- it's just a fancy word, not fancy making) and wow, wow, wow- I was in heaven. Do yourself a favor- bookmark this, make it, and never look back.

Cream Cheese Pound Cake with Strawberry Coulis

For the cake:

1 1/2 cups (3 sticks) unsalted butter, at room temperature
1 (8 oz.) package cream cheese, at room temperature (I used Neufchatel cheese)
3 cups sugar
6 large eggs, at room temperature
1 1/2 tsp. vanilla extract
1/4 tsp. almond extract (You can use more if you like almond flavor, but I want to taste the cream cheese!)
3 cups all-purpose flour (can use half and half cake flour)
1 tsp. salt

For the strawberry coulis:
2 cups quartered, hulled strawberries (about 12 oz.)
1/4 cup water
3 tbsp. sugar
1 tbsp. lemon juice

Directions:
To make the cake, preheat the oven to 325 degrees F. Butter and flour a bundt pan or tube pan (line the bottom with parchment if using a tube pan). Combine the butter and cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until smooth. Add the sugar, increase the speed to high, and beat until light and airy, at least 5 minutes. Add the eggs, one at a time, beating after each addition and scraping down the sides of the bowl as needed. Mix in the vanilla and almond extracts. Add in the flour and salt and mix until just incorporated.

Pour the batter evenly into the prepared pan and smooth the top with a rubber spatula. Bake until the cake is golden brown and a toothpick inserted in the cake comes out clean, about 65-75 minutes. Place the pan on a wire rack and allow to cool for about 20 minutes. Remove the cake from the pan and allow to cool completely. Serve at room temperature.

To make the strawberry coulis, combine the strawberries, water, sugar and lemon juice in a food processor or blender. Puree until very smooth, then press through a fine mesh sieve to remove the seeds. You'll probably have to use a scraper or spoon to "push" the strawberry juice through the sieve and there'll be quite a bit of seeds mixed with a little juice in the sieve that'll kind of stop it up so you'll have to dump out the seeds and do 2-3 rounds of this. Cover and refrigerate until cold. Serve with slices of pound cake.


Tomato Sauce with Onion and Butter

When I first took a bite of this, we'll call it "spaghetti", I wasn't entirely convinced that I would like it. It was certainly different, to say the least. But, after eating (and totally enjoying) my serving, watching my kids eat theirs, and hearing them beg for seconds, I knew this one was going to be one of our new favorites. After dinner was over, I found myself craving more and I literally could not wait until lunchtime the next day to devour the left-overs. I don't know if it was the San Marzano tomatoes or the simplicity of the ingredients that made this so delicious, but I do know that I will definitely be making it again and again.

Tomato Sauce with Onion and Butter

Serves 4 as a main course; makes enough sauce to lightly coat most of a pound of spaghetti

28 ounces whole peeled tomatoes from a can (San Marzano, if you can find them)*
5 tablespoons butter
1 medium-sized yellow onion, peeled and halved
Salt to taste

Put the tomatoes, onion and butter in a heavy saucepan (it fit just right in a 3-quart) over medium heat. Bring the sauce to a simmer then lower the heat to keep the sauce at a slow, steady simmer for about 45 minutes, or until droplets of fat float free of the tomatoes. Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon. Remove from heat, discard the onion, add salt to taste and keep warm while you prepare your pasta. I actually mashed the tomatoes, in the saucepan, with a potato masher.

Serve with spaghetti, with or without grated parmesan cheese to pass.

*I found these at Market Street grocery store. You can also purchase at Whole Foods, or any store that caters to a specialty market. If you can't find them, use whatever brand you prefer, and I'm sure it will still turn out delicious!

Lemon Pancakes with Raspberry Sauce



This made a delicious Christmas morning breakfast. We also made blueberry pancakes because not everyone was too fond of the idea of lemon, but everyone who tasted these were well-pleased! The recipe only makes about 10 pancakes, so keep that in mind!


Lemon Pancakes with Raspberry Sauce
passed down from family, originally from a bed and breakfast

3 eggs, separated
In bowl, mix:
3 egg yolks
1/4 cup flour
3/4 cup cottage cheese
1/4 cup melted butter
2 Tbs. sugar
1/4 tsp. salt
1 Tbs. grated lemon zest

Beat egg whites until they hold peaks. In another bowl, mix all ingredients. Fold in the beaten egg whites until no yellow streaks show with spatula. Drop onto griddle.

Serve with Raspberry Syrup:
Make a simple syrup with 2 cups sugar added to about 1 cup boiling water. Dump in a bag of frozen raspberries and cook it down until it is a syrup consistency.

Chicken Marinade/BBQ Chicken Salad


This chicken marinade is so interesting. It has an oriental/bbq flavor. Jake declared it as amazing! Worth a try for sure.

Chicken Marinade

6 Chicken breasts
One Cup Soy Sauce
One cup Vegetable Oil
And 1 1/2 cups Fresca Soda

That's it!!! Mix all that together and pour it over your Chicken in a bowl and let it marinate over night or for 4 plus hours! You won't be sorry! It's super simple and super delish!

Southwestern BBQ Chicken Salad

1/2 head Romaine lettuce, chopped
1/2 head Iceberg lettuce, chopped
1 can corn, drained
1 can black beans, drained and rinsed
1 bunch green onions, chopped
1/2 bunch cilantro, chopped
4 Roma tomatoes, diced
2 Haas avocados, diced
shredded cheese, Mexican blend or cheddar
crispy tortilla strips

Stir shredded chicken in with the BBQ sauce until well coated. Of course you can use less or more sauce, it's up to you! I like quite a bit since I love the smoky flavor of BBQ sauce in a salad. Toss together the lettuce, cilantro, corn, beans, and chopped veggies. Top with shredded chicken, cheese and crispy tortilla strips. Drizzle ranch or cilantro lime dressing over salad and enjoy!

*to make crispy tortilla strips simply slice about 10 corn tortillas in narrow strips and place on cookie sheet. Spray with vegetable oil cooking spray and sprinkle generously with salt. Place under the broiler and let bake until crispy and brown around the edges.

Mexican Shrimp Cocktail

Aunt Jana just sent me this recipes to add on to the blog. She says they're amazing! I'm not a shrimp fan or I would test them myself.

Mexican Shrimp cocktail

Ing.
2 lbs cooked shrimp peeled and deveined
1tbs crushed garlic
1/2 c finely chopped red onion
1/4c fresh cilantro, chopped
1 1/2 c tomato and clam juice cocktail
1/4c ketchup
1/4c lime juice
1tsp hot pepper sauce to taste
1/4c prepared horseradish
salt to taste
1 ripe avocado peeled pitted and chopped
1. Place the shrimp in a lg bowl. Stir garlic, red onion, and cilantro,Mix in tomato and clam juice coctail, ketchup, lime juice, hop peeper sauce, and horseradish. Season with salt. Gently stir in Avocado. Cover and refrigerate 2-5 hrs. I did it over night then added Avocado right before we served it. Enjoy!!

Yummiest Jam EVER

I have discovered the best way to make jam! It only takes 3 ingredients: Ball Freezer Jam Fruit Pectin (bought mine at WalMart), Splenda, and fruit.

The thing that makes this different is that it only takes 1 1/2 cups of Splenda for the whole batch!! The jam takes on the natural fruit flavor and it is so good! Go ahead, try it, you won't be disappointed!

Green Chile and Cilantro Enchiladas Topped with Special Sour Cream Sauce

My friend Tara made this recipe for a lunch group probably like 6 months ago and every time I have these, they get more and more yummy to me and they are definitely Christian and my favorite enchilada recipe. This has become my official "if guests are coming to dinner" entree. It's so easy, it's a little New Mexican, and it is oh, so delicious.

Green Chile and Cilantro Enchiladas Topped with Special Sour Cream Sauce


3 C. chopped cooked chicken
2 C. Pepper Jack Cheese (the kind with the jalapeno peppers in it)
1/2 C. Sour Cream
1 (4 oz.) can chopped green chiles
1/3 C. chopped cilantro
8-10 flour tortillas


Sour Cream Sauce Mix:
1-8oz. sour cream
1 8oz. green taco sauce (I prefer La Victoria brand, you can find it at any grocery store.)


Instructions:
Mix Enchilada filling ingredients, spoon and spread over tortillas and roll up. Arrange in 9x13 baking pan and coat with cooking spray. Bake uncovered at 350 degrees for 30-40 minutes. Optional: For the last 10 minutes of baking take out and put some of the sour cream sauce and some extra pepper jack or Mexican blend cheese on top. Serve with sour cream sauce and your favorite salsa.

Chili's Fajita Marinade

I don't think I'll ever make fajitas any other way! This marinade is delicious!! I've used it on steak and chicken and it is equally good. To die for!

Marinade:
¼ c. fresh lime juice
1/3 c. water
2 Tb vegetable oil
2 large cloves garlic, minced
1 tsp salt
3 tsp vinegar
2 tsp soy sauce
½ tsp chili powder
½ tsp cayenne pepper
½ tsp liquid smoke
¼ tsp black pepper
dash onion powder

1 to 1 ½ lbs chicken slices or top sirloin
1 yellow onion
1-2 red, yellow or green bell peppers
1 tsp soy sauce
2 Tb water
½ tsp lime juice
dash of salt and pepper

Combine all marinade ingredients. Marinate chicken (at least 2 hours) or beef (overnight). Grill 4-5 minutes per side. Slice onion and peppers. Fry in a preheated fry pan at medium high heat until softened but still crisp (important! there is nothing worse than soggy fajita vegetables). Add soy sauce, water, lime juice and salt & pepper. Cook another 3-4 minutes. Slice meat thinly. Serve with onion and peppers and salsa in a tortilla. May also serve with sour cream, cheese, guacamole...the options are endless.
